Savory Spiced Lamb & Pumpkin Grits
A comforting and hearty dish featuring creamy, pumpkin-infused grits topped with caramelized onions and savory ground lamb.
Ingredients
- 1 lb Ground lamb
- 1 medium Onion, diced
- 1 cup Grits (dry)
- 1 can (15 oz) Canned pumpkin
- 2 tbsp Butter
- 1 tbsp Oil
- 3 cups Water
- Salt and pepper, to taste
- 1/2 tsp Nutmeg
Instructions
The pumpkin adds a silky texture and a subtle sweetness that balances the richness of the lamb.
- Bring 3 cups of water and a pinch of salt to a boil in a saucepan. Whisk in the grits, reduce heat to low, cover, and simmer until creamy and tender (about 20–25 minutes).
- While the grits cook, heat oil in a skillet over medium heat. Add the diced onion and sauté until soft and translucent.
- Add the ground lamb to the skillet. Cook, breaking up the meat with a spoon, until fully browned and slightly crispy. Season generously with salt and pepper.
- Once the grits are done, stir in the canned pumpkin, butter, and nutmeg. Season with salt and pepper to taste.
- Spoon the creamy pumpkin grits into bowls and top with a generous portion of the warm lamb and onion mixture.
Top with an extra crack of fresh black pepper to enhance the spices.
