A comforting and hearty dish featuring creamy, pumpkin-infused grits topped with caramelized onions and savory ground lamb.

Ingredients

  • 1 lb Ground lamb
  • 1 medium Onion, diced
  • 1 cup Grits (dry)
  • 1 can (15 oz) Canned pumpkin
  • 2 tbsp Butter
  • 1 tbsp Oil
  • 3 cups Water
  • Salt and pepper, to taste
  • 1/2 tsp Nutmeg

Instructions

The pumpkin adds a silky texture and a subtle sweetness that balances the richness of the lamb.

  1. Bring 3 cups of water and a pinch of salt to a boil in a saucepan. Whisk in the grits, reduce heat to low, cover, and simmer until creamy and tender (about 20–25 minutes).
  2. While the grits cook, heat oil in a skillet over medium heat. Add the diced onion and sauté until soft and translucent.
  3. Add the ground lamb to the skillet. Cook, breaking up the meat with a spoon, until fully browned and slightly crispy. Season generously with salt and pepper.
  4. Once the grits are done, stir in the canned pumpkin, butter, and nutmeg. Season with salt and pepper to taste.
  5. Spoon the creamy pumpkin grits into bowls and top with a generous portion of the warm lamb and onion mixture.

Top with an extra crack of fresh black pepper to enhance the spices.
