Mint-Infused Braised Brisket with Asparagus and Brown Rice

A comforting dish featuring melt-in-your-mouth beef accented by a refreshing mint dressing and crisp, earthy vegetables.

Ingredients

  • 1.5 lbs Beef Brisket, cut into large chunks
  • 1 bunch Asparagus, trimmed
  • 1 cup Brown Rice
  • 1/2 cup Fresh Mint, finely chopped
  • 2 cups Water
  • 2 tbsp Vinegar (apple cider or red wine preferred)
  • 1 tbsp Sugar
  • 2 tbsp Oil or Butter
  • Salt and Black Pepper to taste

Instructions

The brisket requires a slow simmer to transform its tough texture into something tender and succulent.

  1. Combine 1 cup brown rice with 2 cups water and a pinch of salt in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 40–45 minutes until water is absorbed.
  2. Season brisket chunks generously with salt and pepper. Heat oil in a heavy pot over medium-high heat and sear the beef on all sides until deeply browned.
  3. Stir in 1/2 cup water, 1 tbsp vinegar, and 1 tbsp sugar to the pot. Cover tightly, reduce heat to low, and simmer for 2.5 to 3 hours, or until the beef pulls apart easily with a fork.
  4. While the beef finishes, sauté the asparagus in a pan with butter or oil over medium heat for 5–7 minutes until bright green and tender-crisp.
  5. In a small bowl, toss the chopped mint with the remaining 1 tbsp vinegar and 1 tbsp oil to create a bright herb dressing.
  6. Serve the braised beef over a bed of brown rice, flanked by the asparagus, and drizzle the fresh mint dressing over the top.

Top with an extra crack of black pepper to balance the sweetness of the braise.
