Jalapeño-Spiced Pork & Adzuki Bean Patties with Sautéed Swiss Chard
Savory, protein-packed patties featuring a hint of heat, served alongside tender, wilted greens.
Ingredients
- 1 lb ground pork
- 1 cup cooked adzuki beans, partially mashed
- 2 tbsp cornstarch
- 1-2 jalapeños, finely minced
- 1 bunch Swiss chard, stems and leaves separated and chopped
- 1 tbsp oil
- Salt and pepper to taste
Instructions
The cornstarch and mashed beans act as binders to ensure the pork patties remain juicy and hold their shape.
- In a large bowl, combine ground pork, mashed adzuki beans, cornstarch, and minced jalapeño. Season generously with salt and pepper; mix until just combined.
- Form the mixture into 6–8 even patties.
- Heat oil in a large skillet over medium-high heat. Add patties and cook for 4–5 minutes per side until golden brown and cooked through. Remove patties from the pan and set aside.
- In the same skillet, add the chopped chard stems. Sauté for 3 minutes until slightly softened.
- Add the chard leaves to the pan. Sauté for 2 minutes until wilted. Season with salt and pepper.
- Serve the patties placed directly on top of the bed of sautéed chard.
Serve with a dash of vinegar or a squeeze of citrus if available to brighten the dish.
