Pork Ground Swiss Chard Cornstarch Jalapeño Adzuki Beans

Jalapeño-Spiced Pork & Adzuki Bean Patties with Sautéed Swiss Chard

Savory, protein-packed patties featuring a hint of heat, served alongside tender, wilted greens.

Ingredients

  • 1 lb ground pork
  • 1 cup cooked adzuki beans, partially mashed
  • 2 tbsp cornstarch
  • 1-2 jalapeños, finely minced
  • 1 bunch Swiss chard, stems and leaves separated and chopped
  • 1 tbsp oil
  • Salt and pepper to taste

Instructions

The cornstarch and mashed beans act as binders to ensure the pork patties remain juicy and hold their shape.

  1. In a large bowl, combine ground pork, mashed adzuki beans, cornstarch, and minced jalapeño. Season generously with salt and pepper; mix until just combined.
  2. Form the mixture into 6–8 even patties.
  3. Heat oil in a large skillet over medium-high heat. Add patties and cook for 4–5 minutes per side until golden brown and cooked through. Remove patties from the pan and set aside.
  4. In the same skillet, add the chopped chard stems. Sauté for 3 minutes until slightly softened.
  5. Add the chard leaves to the pan. Sauté for 2 minutes until wilted. Season with salt and pepper.
  6. Serve the patties placed directly on top of the bed of sautéed chard.

Serve with a dash of vinegar or a squeeze of citrus if available to brighten the dish.
