Bacon and Egg Rice Cakes

Ingredients:

  • 8-10 rice cakes
  • 4 slices of bacon, diced
  • 2 eggs
  • Salt and pepper to taste

Instructions:

  1. Preheat a non-stick skillet over medium heat.
  2. Cook the diced bacon until crispy, then set aside.
  3. In a bowl, whisk the eggs and a pinch of salt.
  4. Add the cooked bacon to the bowl and mix well.
